Our Fusion of South American flavors concept was born as a result of Chef Tony's culinary upbringing in Venezuela and cooking side to side with his grandmother who traveled to various countries in South America.

With exotic Brazilian, Argentinian, Ecuadorian, Peruvian, and Venezuelan flavors Chef Tony promises to liven up your dining routine! While we offer a variety of South American dishes; our steaks and seafood take center stage at Longitud315. The variety of meat cuts meats are real stars here: all cooked in an open flame grill and served in all their succulent splendor.

Our main dishes and most of our dishes are accompanied with our Signature Chimichurri Sauces and Hand-crafted bread. You'll also find a tasty lineup of small plates including, Empanadas, Arepas, Ceviche, Rice, Black Beans, Yuca, Plantains, and other delicacies that offer you the best flavors from South America.

Chef Tony Castillo

Tony Castillo is the Executive Chef and Co-owner of Longitud315 in Highwood, IL. Chef Tony brings to Highwood and all food lovers a fusion of South American flavors. With exotic Argentinean, Brazilian, Ecuadorian, Peruvian, and Venezuelan flavors Chef Tony promises to liven up your dining routine.

Chef Tony's early and most fond memories are in his grandmother’s kitchen and cooking with her at a very young age. She taught him that cooking wasn’t about just creating a dish but good cooking comes from the heart; therefore, his love and passion for cooking which he transmits in every dish. A constant memory in Chef Tony’s are his mother’s wise words, “Taste with your eyes the seasoning of your cooking, but the very last touch of seasoning must be tried on your hand palm to assure the right flavor.”

It was at a very young age when Chef Tony moved to Mexico where some of his family resided and he worked at his parent’s restaurant helping in the kitchen where he mastered the arts of butchery. Regardless of what Castillo’s siblings used to say that the kitchen is meant to be used just for the women of the house, he has proven that kitchens are meant to be used for whoever enjoys cooking…

Chef Tony followed his love for cooking and began his formal culinary career in Guanajuato, Mexico at the recognized Institute of Culinary Arts and Gastronomy where he was awarded a scholarship to continue his culinary dreams in the United States.

Chef Tony has worked for recognized restaurants including Flat Top Grill, where he was able to hone his skills in Thai and Asian Cuisine. Most recently, Chef Tony was an Executive Chef for Guckenheimer Enterprises where he won Chef of the Year. Chef Tony also was very successful in running his Catering business and creating unique and memorable customer events under Fusion of Flavors, LLC.

At Longitud315, Chef Tony has demonstrated his passion for cooking and he has created exquisite dishes where meats, seafood, and homemade sauces, including his well-known signature Chimichurri sauces, are the main attraction. As a result, in 2014, Longitud315 was voted by Open Table voters “one of the TOP 100 Restaurant Neighborhood Gems in America.” A recognition received by only three restaurants in Illinois. Further, a tasty lineup of small plates, entrees, and side dishes (vegetarian and gluten-free options available too) promise to satisfy all food enthusiasts!
